Low Sugar Chia Jam Recipe
Jam is traditionally made with a high sugar content, which served a purpose to preserve fruit before refrigeration and freezers were easily accessible - however, today in the Western world we have a problem with how much sugar is consumed on a daily basis.
This chia jam recipe is free from refined sugar and works great with frozen berries. It is also an excellent option for kids.
Recipe:
Ingredients
250g fruit or berries (fresh or frozen)
1tbs maple syrup
1tbs chia seeds
1tbs psyllium husk (or ground flax)
1 lemon, juice
Method
Add fruit to a saucepan and crush or blend until it forms a paste. Simmer on low heat.
Add chia seeds, psyllium, maple syrup and lemon juice and stir until combined.
Take off the heat and refrigerate for 20-30 minutes. The psyllium and chia seeds will firm up the jam.
Store in the fridge for 2 weeks. As this jam doesn’t contain high amounts of sugar, it will not last for months like traditional jam.
Serve on toast with hemp seeds or nut butter, add to chia puddings, oats, yoghurt and granola, or use in desserts🍰
